Catherine Holbrook

Catherine is a Natural Cheesemaker at the organic cow-calf Shetland microdairy, The Rare Dairy. This experience is one of cross-farm collaboration, where the rhythms of a microdairy can spark ideas in small-scale arable.

Combined with studying the Roots to Regeneration training programme, she is building towards a regenerative context for the home farm in Shropshire.
